We’ve been exploring and guiding guests through the Cape Winelands for almost a decade now. We watch carefully as the seasons change, and we keep tabs on the many stories that unfold from estate to estate. It does not happen often, but every now and then we stumble apon an experience, an estate, and a group of people, that after all this time, gets us more excited than ever.
Recently, the Saffa Tours team was invited to Oldenburg Vineyards, for a look behind the curtain of one of South Africa’s most incredible wine making operations. Tucked deep in the Banhoek valley it quietly allows its extraordinary terroir, regenerative farming practices, and pursuit of precision winemaking to speak volumes.
We started our morning on a 4x4 buggy with their viticulturist Christo. He walked us through the vineyards and explained with detail, and a lot of passion how his practice is rooted in regeneration, not exploitation—working with nature rather than against it. He focuses on building healthy soils with minimal intervention, which in turn results in healthier vines and more expressive fruit. The care and intention behind every block of vineyard is obvious: each one treated as its own ecosystem, nurtured to bring out its best.
If a vineyard is not up to his standards, they simply do not harvest that block, that year. The attention to detail, and the pursuit of perfection was genuinely jaw dropping. Standing at the top of the Rondekop, the round hill that defines the geography and some of the philosophy of the estate, you gain an appreciation for how each corner of the farm, and its specific vineyard is treated differently according to the specific geographical variables at play. Christo explained to us that this is not a monoculture, each vineyard is treated differently.
Listening to, and understanding (some, not all) of what Christo explained lead us perfectly into the next segment of our Oldenburg tour - A tasting with winemaker, Nic Van Aarde. What followed was not your typical tasting. Instead of polished wines from a menu, Nic took us through a barrel tasting, offering a rare, behind-the-scenes look at wines in their most raw and honest form, most of them still evolving. We tasted single components of blends, wines from different vineyards and elevations. With each sample drawn by pipette (Or wine thief as a I prefer to call it) and poured into our glasses, Nic guided us through the subtleties—tannin texture, acidity tension, fruit purity, and that sense of place that defines truly great wine.
Nic’s winemaking philosophy is grounded in restraint and respect. “The vineyard gives us the story,” he said. “My job is not to rewrite it—it’s to make sure nothing gets lost in translation.” He favors minimal intervention in the cellar, relying on natural fermentations, gentle extraction, and a careful use of oak to let the vineyard’s voice shine. His approach is as much about what he chooses not to do, as what he does.
Finally, we were treated to a seated tasting with the head sommelier, who brought out vintages not available on the public menu. With each pour came a story: of the season, the soil, and the subtle shifts that make Oldenburg wines what they are. It’s not just about tasting wine here—it’s about understanding a philosophy, one that focuses on craft, attention and care.
Oldenburg is not trying to be the loudest voice in the room. Instead, it’s quietly shaping a legacy defined by excellence, environmental stewardship, and an unwavering commitment to authenticity.
